Ketogenic Chai Lattes

Skip the high sugar, pricey Starbucks chai lattes and try this ketogenic, no sugar-added version! We use monk-fruit to keep it sweet without the inflammatory effects of putting sugar (or fake sugar) in your body! You will be fueled for the whole morning with MCT oil and grass-fed butter for the bulletproof version of this latte.

Ingredients for concentrate:

  • 4 organic Ceylon cinnamon sticks (crushed/broken)

  • 4 teaspoons whole black peppercorns

  • 20 whole cloves

  • 2 bay leaves

  • 12 green whole cardamom pods (cracked)

  • 4 inches of fresh organic ginger root (sliced into thin strips)

  • 4 tablespoons loose black tea or 12 black tea bags

  • 8 cups of water

For lattes: 

  • Coconut, almond, or organic whole milk

  • Pure monk fruit for sweetener

  • Optional: grass-fed collagen, MCT oil, grass-fed butter

Directions:

  • Add cinnamon, peppercorns, cloves, cardamom, and bay leaves to pot and warm to toast them

  • Add sliced ginger and hot water to the spices and simmer for 10 minutes

  • Remove pot from heat and add tea in strainer/infuser (or add the tea bags) and cover/steep for 10 minutes

  • Strain out the spices and remove tea infuser or bags. Allow chai mixture to cool in the refrigerator and keep refrigerated until ready to use.

For preparing lattes:

  • Use a small saucepan or microwave to heat 1:1 ratio of chai mixture and milk of your choice.

  • Once heated, add ¼ teaspoon of monk fruit powder (or to taste) and mix well, if you have a milk frother feel free to use that to mix!

Ketogenic/bulletproof version:

  • Once your latte is heated, add grass-fed collagen, 1-2 tbsp of MCT oil and 1-2 tbsp of grass-fed butter

  • Blend to emulsify the oils in your latte

* If you are new to bulletproof lattes, add smaller amounts of MCT and butter over time to make sure you tolerate them well
